Aromático, refrescante, algo cítrico y levemente picante, el jengibre es indispensable en los platos de la cocina asiática. Esta especia no sólo añade sabor a las comidas, también le regala al organismo sus propiedades antioxidantes.
El jengibre es nativo del sureste asiático y figura en textos milenarios de las culturas china, india, japonesa y de toda Asia como un importante ingrediente medicinal y culinario.
Los antiguos romanos lo importaban desde el Lejano Oriente y, aunque era una especia muy costosa, durante la Edad Media fue muy utilizada en la preparación de carnes, debido a su cualidad para disimular el mal olor que tenían algunas ellas.
El jengibre crece bajo tierra en climas cálidos. Es un rizoma, una especie de bulbo muy irregular al que le crecen raíces. Entre los principales productores de jengibre están Jamaica, India, Indonesia, Nigeria, Filipinas, Tailandia y Estados Unidos.
USO Y CONSERVACIÓN
El jengibre fresco posee un sabor levemente cítrico y deja un toque picante. Esta especia es muy utilizada en las cocinas de Asia donde se incluye para darle sabor a verduras, carnes, pescados y mariscos. Resulta ideal para preparar marinadas.
El aroma y el sabor del jengibre fresco son más fuertes que los del seco y en polvo. El jengibre es fresco cuando está firme, con textura suave y libre de moho.
Sin pelar, el jengibre se puede guardar en el refrigerador hasta por 3 semanas. Congelado se conserva hasta por 6 meses.
El jengibre fresco combina muy bien con ajo, chiles, albahaca, limonaria, cebollas y tamarindo. Una pizca de jengibre le da un toque fresco y muy especial a la limonada y al jugo de melón.
